VINE VARIETY: Pecorino 100%
BIOLOGICAL
NAME: Offida Pecorino DOCG
FIRST YEAR OF PRODUCTION: 2019
AGE OF VINEYARDS: from 16 to 24 years depending on the plots.
SOIL: various morphological characteristics, with a high presence of stones, partially clayey, with different sun exposures.
YIELD PER HECTARE: 50/60 quintals/ha
TRAINING: double Guyot from 3300 vines/ha for older plants to 4500 vines/ha for more recent plants.
HARVEST: manual harvest with sorting of the bunches in the field.
VINIFICATION: the selected grapes are stored in a cold room, for a certain period of time, to obtain a greater extraction of the aromas. Subsequently the grapes are processed in white at a controlled temperature for about 30 days in steel tanks.
AGING: 12/13 months in steel on its lees, with different bâtonnage, at controlled temperature. Possibility of storage from 1 to 6 years.

Nose: fruity aromas tending towards tropical, with a sensation of white flowers and light woody nuances.
Mouth: remarkable structure, enveloping but at the same time acidic, mineral with a sensation of pseudo warmth, light notes of pastry and hazelnut.
